DC Bratwurst or New Nurnburger

Our DC Bratwurst is a 3.2-oz link. When we started making this sausage we called it New Nürnburger because we thought the recipe came from the Rhine Valley near Nürnburg and we were 3.2 oz links instead of the traditional 2 oz link. Later we discovered that the recipe did not come from Nürnburg, so we decided to call it a DC Bratwurst in honor of the place where we first made it.

This bratwurst combines caraway and lemon zest which are used in German, especially Bavarian, bratwursts. To these seasonings we’ve added white pepper, gray sea salt, and nutmeg. We do know that this bratwurst is delicious, especially with sauerkraut and spicy mustard.

Each 12.8-oz. package contains four 3.2-oz links.

To cook: grill, broil, saute, or stew (e.g., cook in sauerkraut). Can be microwaved, but this makes the casings extra chewy.

Ingredients: Duroc pork, French gray sea salt, water, caraway, pepper, lemon zest, and nutmeg.
